rolls of eggplant, cheese and bacon cakes with coconut
This recipe I got it from Wired New York, and is excellent and fast to prepare.
Just grill the eggplant, put a piece of cheese (I used sliced \u200b\u200bGalbanino), roll and wrap with slices of bacon rolled up. I put a stick to make them stay in shape, I lifted and I put them in a pan with a little oil turning them a couple of times, time to melt the cheese and make a little crunchy and the bacon is ready.
You can leave it or put the sticks :-)
